Rice – 3 cups
lemon – 2
Green chillies- 6-10
Mustard seeds- 1 tbsp
Cumin seeds – 1/2 tbsp
Groundnuts – 1 handfull
urad dal-1 tbsp
Red chillies(For decorative look)
How to make :
Cook rice in a cooker and keep it aside.Let it cool.
Cut lemon into halves and Chop coriander leaves(Make sure there is enough coriander leaves.Adds taste to lemon rice)
Once the rice is cooled down or warm, Squeeze lemon into rice,add chopped coriander leaves and salt.Mix well.
Take 2 tablespoon oil in a kadai. Add mustard seeds and let is splutter.Add urad dal,cumin seeds,groundnuts,red chillies,green chillies,curry leaves.let urad dal become lightish brown.Now add a spoon of haldi.Mix well and leave it on medium flame for a minute or 2.
Turn the gas off.Mix tampering (vaggarane) with Rice that is set aside.
Lemon rice is ready.You can have it with coconut chutney.Shenga chutney with lemon rice tastes good.
